Peanut Butter and Jelly Pancakes...

This idea came from my friend Lisa and her bridal shower. It was a PB & J party. P stood for panties. B stood for bras. And J stood for janitorial supplies. It was a fun party! We had strawberry cake with a strawberry cream cheese layer and peanut butter frosting. It was fun.

These pancakes I stirred in peanut butter, strawberry preserves, and a bit of fig preserves.

The one thing I liked about these pancakes were the bits of peanut butter and jelly you would get throughout it!

Andes Mint Pancakes with a Cream Cheese Drizzle

First new creation since Round and Fluffy's birth. And let me tell you they are sweet and fresh!

My roommate had a little bit of Andes Mint chips leftover so I put those in the regular just add water pancakes mix. While I was cooking those I made a cream cheese, butter, powdered sugar, and just a touch of skim milk drizzle for the top. I don't every measure with pancake recipes so I just made enough of everything for 1 person. I softened the butter and cream cheese and then beat them with the mixer. I love mint so the Andes chips were perfect for a refreshing taste to a sweet one. Caution: These pancakes are sweet and thus should not be enjoyed without a cup of coffee!

Greetings: Shalom!

A year ago I lived in Israel. I lived on a kibbutz and in a house with some pretty amazing girls. These girls and I love God and His people. We had a very special tradition. Every Friday morning (shabbat) most everyone in the house would sleep in. I, on the other hand, am not a night owl (if my eyes droop then I start the crawl towards my bed) and enjoy getting up early to make breakfast for my friends. Usually I made chocolate chip pancakes and coffee. We would either sit around and eat them together or just do our own thing. Now I am back in the States and surprisingly still making pancakes. Sometimes I make them for friends on the weekends. Sometimes I make them for myself. I have found that I love to create pancake flavors!

So here I am...mixing, flipping, photographing, and then sharing my creations. I love it!
